Sweet Paksimadi (Type of Biscotti)

You’ll need approx. 2 hours


Makes around 50 paksimadia




  • 3 oranges
  • 2 cups whole pistachios (shelled )
  • 3 cups plain flour
  • 1 cup oil (you can use olive oil but if you want a lighter taste, use sunflower oil)
  • 2 vanilla pods
  • 1 cup sugar
  • 1 sachet baking powder
  • 1 tsp cinnamon

Pre –heat oven 180-190 degrees Celcius



  •  Grate oranges and then squeeze (you’ll need the juice and grated rind)
  • Cut through vanilla pod and scrape out seeds
  • In a bowl, place the sugar
  • Add the oil, baking powder, orange juice, and vanilla seeds and mix a little bit with hands
  • Add only the 2 cups of flour first and the grated orange rind
  • Finally, add the whole pistachios and cinnamon
  • Add a tiny bit of lukewarm water (1/4 cup)
  • Start mixing with hands. You have to work it a bit until you can feel the sugar melting
  • Slowly add rest of flour, keep mixing by hand. It should start becoming doughy
  • If it looks too dry, you can add a bit more oil
  • Line 2 baking trays with parchment paper
  • Take a handful of the dough and shape into a log shape. This recipe should make 4 ‘logs’
  • Once ‘logs’ are placed on baking trays, lightly cut (not right through dough) all along ‘log’. Leaving Approx. 1.5 cm in between cuts
  • Place in oven for 20-25’
  • Take out and let cool (you’re NOT finished yet!) You have to bake a little more. Turn down oven heat to 150 degrees
  •  Once cooled, cut right through. Don’t worry if they crumble a bit. They will baked a little bit more
  • Once cut, place in oven again for another 30’-40’ (keep an eye on them)
